The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 16-quart pressure canner is more than adequate for any home canning needs. It''s a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It''s easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor.

The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam-release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that''s useful for weeknight dinners or for any meal that needs to come together quickly. An accompanying booklet contains more than 50 recipes, ranging from basic soup stocks to stews and pot roasts--even sweets like English Plum Pudding and Brown Bread. Tenderize lean cuts of beef or pork, or cook chicken, fish, or vegetables faster than you can in a microwave, and without losing moisture.

Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. The lid of the Presto 16-quart pressure canner is not immersible. In addition, the sealing ring should be removed after each use to allow cleaning of the inside rim of the lid. The dial gauge is delicate; detailed care instructions are found in the accompanying booklet. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. The pressure cooker measures approximately 14-4/5 by 14-4/5 by 12 inches and carries a 12-year limited warranty. It was easy to learn and after reading and re-reading the instructions and watching a couple of videos I felt confident enough to use for the first time. The design tolerances of this are mediocre. IF you can get the pressure stopper to both come UP, and then to seal completely, you could get this to work. But the bottom of the pressure stopper continually hisses water droplets. This also means it takes a REALLY long time to get to 15PSI. I was luckly last time I used it because after 90 minutes of pressure cooking jars, after starting with 3 inches of water in there, I ended up with barely any water and it was below the metal insert. Running out of water in a pressure cooker is NOT a good idea. All kinds of badness can occur.

If you can spring for it and are doing lots of pressure cooking, get a REAL pressure cooker. $$$
If you are just doing like 7-10psi ''cooking'', then go for an all in one unit. $$
If you can get buy with a smaller 6 quart unit, get T-fal, they are currently the best. $
Fagor used to be the best like in the 2000''s, but they changed their manufacturing and the steel and quality is not what is used to be.

I had a Fagor 8quart electric pressure cooker, it never worked and burned more more than it cooked. After a year of research and shopping, I decided to go “old school”. I ended up choosing the Presto 16 quart for several reasons. 1) I didn’t like that the only “feedback” an electric unit gives is a few beeps. This 16 qt unit has 3 points of feedback so you know everything is working as it should (the rocker, the dial, and the piece that pops when there is pressure in the unit). 2) this unit is a crossover...it’s a canner, but it’s also a cooker, meaning you can make meals in it also. The larger units are canners only and the smaller units are cookers only. And it doesn’t matter if you have a recipe for a 6 or 8 quart, you can still use this pot. If you double the recipe, just be sure it’s not over the max fill line & abide by any other warnings in the instructions, and 3) for less than $65, the price is great. Now that I have had the unit for a few months, it has worked perfectly. I’ve made great recipes without burning anything, and they all taste amazing. I know I can’t “set it and forget it”, but I usually take the time to clean up, fold clothes, etc, so it’s like the the old phrase goes “kill two birds with one stone”. My time isn’t wasted at all, it cooks and I clean.

I wanted to can beef and chicken for a long camping trip. I''ve never used a pressure canner before and am of an older generation who has heard all the horror stories of canners blowing up. Even though people say that modern ones, if used properly, won''t do that, I was terrified the first time I used it. I still sit in a chair and keep an eye on the pressure gage, so I can adjust my burner up or down to keep it at the proper pressure. Seventy to ninety minutes in a chair watching a gauge is boring, but you can put on an audio book to keep you entertained as I did. I''m not scared of the thing anymore, but I am careful. Don''t hesitate to buy this canner even if you haven''t used one before. Your own canned meat is tastier than anything on the market. Since the meat cooks in the canner, you can make really quick meals at home or over a camp stove. They do have bigger canners, but this was a perfect size for me. Also, I believe another reviewer said the larger size doesn''t fit in a normal kitchen sink, which made it hard to wash. The 16 quart is just right.

I love my Presto 16-Quart pressure cooker. I thought I would be intimidated but after reading the included instructions and trying a couple of recipes in the included book, I was very happy with the performance and outcome of food. I''ve made the beef goulash and corned beef. Both turned out great. I cooked a whole chicken and while it tasted alright, it wasn''t great. I can''t say it was the fault of the pressure cooker. I also cooked a spaghetti squash (cut in half) that turned out very good and all of these dishes were quick and easy to prepare.

I bought this pressure cooker primarily for canning but I have not used it for canning yet. I''m sure it''s going to work just fine and I''ll update my review once I can something.

Prior to owning this item I had never canned before nor had I ever seen it being done. The reviews of this canner are very good and I concur. It appears to be well made and I have used it several times in the 2 months since starting, for peaches, pears and salmon. Not all pressure canners have the pressure dial, relying instead on the weight, which this one has as well. Since the weight registers 15 lbs of pressure, and many items only need be cooked at lower pressures, it is a nice extra feature to have. The accompanying booklet clearly explains operation & maintenance and has recommended procedures for many different items. The unit also requires virtually no cleaning.

Really my only hesitation in buying this item was whether the size would be right. The 23 quart version is virtually the same price. Having used it many times now, I don''t regret getting the smaller version, even though I have had to do a 2nd run, when all the items I''d canned could not be processed at once. Make no mistake, this is not just a matter of doubling the ''cook time'' for a 2nd run. For example, if it takes 110 minutes to process something, you won''t only spend another 110 minutes to do it again. After sealing the lid, it takes maybe 10 minutes to get steam coming out the vent. You are to let this run for another 10 before putting the weight on and some time after that the pressure will start to rise. If you can get up to pressure in 10 to 15 minutes after that, only then does the processing time start. Once done, the heat is turned off and the pot should be lifted off the burner. It may take another 15-20 minutes for the pressure to register zero on the dial. You should then wait another 10 minutes before opening the lid. Be VERY careful of the steam that exits! The jars can then carefully be removed and new ones added, but note the steps above before the cooking time for your next batch even starts. And then there is the 2nd ''cool down'' time.

Three main considerations had me choose the smaller (16 qt vs. 23 qt) canner: 1 Generally, I don''t expect to be canning that many jars at a given time, 2. Storage space when it is not being used was an issue, 3. Lifting the very hot unit off the range as soon as it is done, with the water inside and full of jars, can be a bit tricky.

Although the 23 quart size can also be used on a glass top, lifting it to move it to a cool place on the stove once the cooking was done and I was waiting for it to cool would have been too difficult for me if the 23 quart size was used to its (greater) capacity. Dragging it from one place to the other could damage my stove top. Do keep in mind that the 16 quart is too short to safely water bath can quart/liter jars, so if you have a tall water bath canner, don''t get rid of it! I am very happy with the pressure cooker. The instructions are clear and following them exactly will lead to great and safe home canning. I made 7 pints of BBQ sauce the day it came. This product is the only one I found that had a bottom adapted to fit the vitroceramic burner size. Can fit 9 pints jars. Add a tablespoon vinegar to the water or the aluminium gets dull. On mine, when I use the 10 psi preweighted stopper, the gauge reads 11 psi. Maybe it''s just mine though, a little over is always ok.
